@owen I might weigh in about this latest song. I actually prefer the slower version because the sadness of the song seems more immediate than the fast version. Perhaps if you recorded it at a faster tempo the subtleties of your voice would come through more, but as of now, I vote for the slow one.

I just finished the final episode of The Mandalorian. This is really good stuff—the equal of or better than any of the Star Wars films. Good story line, excellent cinematic story-telling, character growth, great special effects, truly wonderful and compelling music. Plus a surprise at the very end.

Tried bagels with yeast instead of sourdough. Easier, quicker, prettier. Tastes pretty good too.

@owen The dough never rose at all. My recipe had a long kneading process in the kitchen aid, and I wonder if somehow that killed the starter. I might try again and knead it gently by hand.

@owen my starter is healthy and active, but the dough seems dead. We'll see how it looks tomorrow, and I can give it a couple more hours of proofing if needed. Will send update.

Owen, I’m going to attempt to bake sourdough bagels. How long do you boil them before baking?

The flour for the whole grain bread consists of hard red wheat berries, rye, and spelt, all milled on Barb’s home flour milling machine, plus some white bread flour, and some sourdough starter.
