Owen, I’m going to attempt to bake sourdough bagels. How long do you boil them before baking?
@owen my starter is healthy and active, but the dough seems dead. We'll see how it looks tomorrow, and I can give it a couple more hours of proofing if needed. Will send update.

@owen The dough never rose at all. My recipe had a long kneading process in the kitchen aid, and I wonder if somehow that killed the starter. I might try again and knead it gently by hand.
@grampyfr I've been doing two minutes on each side, four total, but all the recipes call for 1 min each side.
Do you have a starter? Sounds like an interesting project
